Not necessarily. Priority codes only matter within a dealership. It means that if your dealer has two builds that are EXACTLY the same, the one with the lower priority code SHOULD get built sooner. It's not a gaurentee because Ford has many factors determining what's built. Constraints, etc

For example, here's the window sticker for a vehicle built in December and delivered in January. The bottom date is 4/11 (today) because I'm probably the first one to look at this window sticker in a while.😅...
The date just shows when the last time the window sticker was generated by Ford's system. It doesn't have any other meaning.
You can see this by going to a dealer's website, picking a vehicle that's been on their lot for a while, and you'll see the window sticker has a recent date.
Even with a deposit the dealer can sell the truck from under you. That's called breaking a contract. When a contract is broken both parties are typically reverted to the state before the contract, so you'd get your deposit back and the dealer keeps their Maverick.

Have you checked if your VIN is affected by the new recall announced last week? I know they're not allowed to sell a vehicle with an unrepaired recall on it. Hopefully that doesn't delay your pickup.

Yes, I was originally scheduled for 2/28 and had it moved up two weeks to 2/14. However my build was on a chip hold for 4 weeks so it wasn't built until 3/13.
Unfortunately Modules being populated doesn't mean you're close to being built. My modules (100+) populated 2/18 but it took nearly a month after that to be built.
