Can brake hold and stop off/on both be active?
Auto-Hold and Engine Start/Stop are two separate features which can be enabled/disabled independently.

Auto-Hold will keep the brakes engaged when you come to a complete stop and apply sufficient pressure to the brake pedal. Meaning once engaged, you can take your foot off the brake and the car will stay still, until you get on the gas.

Engine start/stop will shut off the engine when at a stop, again after you apply sufficient pressure to the brake pedal. On a 2020 Escape, this seems to take a bit more pressure than auto-hold. The engine will restart once you press the gas pedal, try to turn the steering wheel (no power steering when engine is off), or when the engine needs to come back on to provide HVAC, etc.

Both are toggled with buttons located near the gear selector dial.

Very nice congratulations! Can you tell me if you remote start the vehicle, it doesn't beep twice to remind you there is no key in the car, does it?

So they both can be toggled active and work simultaneously?

Of course. There's no conflict between them.

When at a complete stop with Auto Hold on, there will be an icon on the LCD display indicating this. Let off the brake and it will hold.

For engine start/stop, the computer will determine if the conditions are met to use it. If everything checks out, when you press firmly on the brake pedal, an icon will show up below the LCD and you'll feel/hear the engine shut off. If the computer decides not to shut off the engine, an icon will show up on the LCD display.

If both are on, when you come to a complete stop, Auto Hold will engage with the little hold icon on the LCD. If you've pressed firmly on the brake (more than just barely pressing the brake to stop), Engine Start/Stop will kick in so long as everything checks out, and a second icon will show up on the LCD.

Then when you press the gas again, Auto Hold will disengage (brakes will release) and the engine will restart. Brakes are basically immediate and the engine should be ready to go in about a second.
