Do you think something like this would work or is 20mm not long enough on the bolts?

Looks like big box stores have 'em, but I'm not seeing anything in metric, which means you'd need new female knobs if you want to use the ones included in the kit.

Yep, 10mm to short.

SAE nuts & bolts are cheaper than Metric. Still cheaper than $19 to even if also buying the wing nuts, since I would also need the longer M8 bolts.

Definitely more than one way to skin a cat, as they say. I don't have these in hand so I'm guessing I'll end up taking one apart and going to a big box with it and prototyping it in the screw aisle! xD
