Anyone have an idea of what the max payload and towing capabilities would be with the 2.0 AWD with FX4 but not the tow package?

Max payload would be 1500lbs and Max tow capacity is 2000lbs. These numbers are approximate and may be lower depending on configuration. Remember payload and towing capacities affect each other, you will need to know the GCWR to make sure that you are not overloading your truck

^What he said. Payload is 1,500 lbs. (give or take) across the board. 2,000 lbs. is standard across the board until the 4K Towing option is added.

The 4k towing changes the differential gear ratio. This different ratio only comes with the 4k option.
For the 2.0L the 3.63 is the standard ratio for FWD and AWD but 3.81 is with 4K Trailer Tow Pkg.
Hybrid has a 2.91 but it is not really comparable.

You won't know the exact payload number until you can see the yellow door sticker. For reference a Hybrid XLT with unknown options content has this payload:
(13) Maverick Hybrid XLT Payload Rating is ~ 1426 Lbs (per captured yellow sticker! ) | Page 2 | MaverickTruckClub.com - 2022+ Ford Maverick Pickup Forum, News, Info
My guess would be since the 2.0l AWD FX4 has a base curb weight slightly above the 2.5l FWD Hybrid, your yellow sticker actual payload might be a little less than the Hybrid (more vehicle actual weight = less actual payload capacity). The 1500# as Ford always trumpets is a "max. rating" and not necessarily what your actual value may be.

I think they (Ford) have been touting the 1500 "all in the bed" as a marketing ploy for those concerned with the unibody design. Sort of like saying "you're not going to fold it in half by putting a lot in the bed."

Look on the yellow door plate, drivers door, it tells you the payload, tire pressure and other fascinating details.
