How reliable are build dates?

I placed an order Tuesday, already have a VIN and schedule date.
Was actually planning on adding 4k tow later today, but if I remember my Bronco nightmare correctly, I can't make changes after a VIN is assigned.

I think it's safe to say that the only thing you can be sure of is, you can't be sure of anything.
