Your specific question is EP or ESP. I generally use EP on my 22 EB. Hell, I’ve even mixed Pennzoil Ultra with Mobil 1. I’m currently using ESP because it was on sale for less than EP. My change intervals make ESP redundant but on that day it was cheaper. I don’t think it makes a difference.

Never did a Maverick brake job but did many others. The last one was two years ago on a Dodge Charger. I used high end pads/rotors and total cost was $500 for all four including slider seals and anti-rattle clips. That’s at crazy inflated Canadian prices.

The EB has an hour meter but it doesn’t allow you to reset so you would have to monitor and document from time to time.
