How important is hub bore sizing?

I understand the Maverick is 63.4mm and the wheels I'm looking at are 73. How important is it to match this up? I assume at the very least, the wheel has to be bigger than the hub or it simply wouldn't fit

The bore on the wheels needs to be equal or larger. Yes the gap matters. You can buy hubcentric rings that fill the gap. They can be plastic or metal. They are fairly cheap.
