I usually just drive my EB Lariat in Normal Mode and I like the feel of it's firm acceleration (comparing with my old Outback 2.5 CVT).

Today, I decided to try it's Eco mode, I almost immediately felt that the acceleration was so much softer.

Is it real or I just psyched?

It is softer. Though I believe if you push the pedal to the floor, they will be pretty much the same.

I can't speak to the Mav specifically (don't own one, yet!), but my Nissan does exactly that in eco--it softens the accelerator. I think the idea is to keep the fuel consuption down by making the accelerator behave better when a lead foot is driving.

As to the title of your post, I am saying it is real, but I can't provide evidence that you're not psycho. 😜

I had already been driving the Maverick for lots of miles before I thought to try "Eco" mode. It felt so sluggish, weak and unresponsive, I immediately put it back in "Normal" and haven't tried it again.
