I don’t think it’s about learning it, that’s easy, it’s the safety of using it. You have to take your eyes off the road to use a touchscreen. You do not to use a knob. Changing a channel in the radio, turning up or down the temp, turning up or down the fan, etc. all require taking your eyes off...
