I have got an email from my Ford dealership with the subject line being "Taking Orders for Your New 2023 Ford".
The content was to click on a link where I can make a new Ford custom order at this Ford dealership's homepage.

I assume they are asking for it to finsh the COVP on their end. That is a good sign ;)
The deadline is closing for COVP submissions if I got that right.
I was wondering if pushing everyone (hybrids if battery is the major constraint) to 11/14 (last week of planned production) and then pulling them ahead slowly as they can be built. I saw some people on this forum getting pushed back a few times until finally a push ahead which does not move...
MY23 just went online on ford.com. They really waited till October.

(they have conflicting info on lariat lux package content, e.g. ESA in lux pkg but then seprately in the C360 assist, etc)
They have small add-on boxes (like StartX for example) that are about $100 and will make your truck remote start from your original keyfob.
That is a cheaper option and 100% will not put any risk to your order from constraints p.o.v.

Yes, it is a good idea. I have done exactly the same and removed them from my order :)
The bed rail is something that you can get after the truck got delivered. It is not an acc that must be installed in the plant it is installed at the acc shop next to the plant anyhow.
For the remote start...
I wonder if this short retail order window has to do anything with the below from the Ford confirmation email:
"Your vehicle order is one of the early orders for 2023 Maverick LARIAT, and because we are building this vehicle just for you, we wanted to share a bit more on our production process...
