I think it just takes a week. I'd reach out to your dealer after a few days to see what pit stop it makes. The dealer for my sister's truck told me it stopped in Mira Loma before it came to Burbank, so she was given one day notice that it was ready.
Sanderson Ford supposedly has a good reputation for not padding the bill.

My guy @ Earnhardt told me that he submitted my order to his 'inventory manager' on Thurs. This meant that it never got submitted since I never got an email.

In my experience, If you Google documentation fees, many times you can find it posted on the dealer websites.
In addition, sometimes you can also find out buried in reviews in case that number is different than what you saw/expected.
In my area, $500 is the norm.
